Peanut Butter and Banana Smoothie

A smoothie is a great way to start the day, or to consume between meals. This peanut butter and banana smoothie is filling, contains much needed antioxidants and one of your five a day.


I love tasting different flavours of food and drink, and in the past I've loved buying innocent smoothies or something alike. However, this was until I realised how much sugar is packed into them! Making your own smoothies is a great way to know exactly what you're putting into your body.
 
For this smoothie, you will need:
 
 
 
- 1 Banana (chopped)
- 2tbsp Reduced Fat Peanut Butter
- 2tbsp Desiccated Coconut
- 1tbsp Flax, Sunflower, Pumpkin, Seasame Seeds and Goji Berries Mix (alternatives: any of the listed seeds on their own, Chia Seeds or something similar)
- 500ml Unsweetened Almond Milk
- 1tbsp Golden Syrup (optional for a sweeter taste)
 
NB: These measurements are for 2 portions, if you are making for more or less then adjust accordingly
 
Blend all these ingredients together to make a delicious, filling and refreshing smoothie. Put the banana in the blender first as this is the ingredient that will need blending the most.
 
My top tip is blend on a low setting in 10 second intervals (x3). Let it sit in between for 3-4 seconds. This way, any bulkier bits tend to be at the bottom therefore will blend in the next interval.
 
The banana and peanut butter compliment each other so well, while the coconut gives it texture, the seeds are super good for you, the golden syrup adds that extra sweetness and flavour which all blend well with the smooth taste of the almond milk.
 
I made this for me and my mother and we thought it was delicious. We both felt energised, full and refreshed after drinking this. It's a prefect spring/summer breakfast or snack.
